Salut tout le monde,

Je remarque, peut-être à tort, que la plupart des restaurants où je vois le personnel en cuisine emploie des hommes issus de l'immigration africaine ou sud-asiatique. Ce qui m'impressionne le plus, c'est de les voir façonner et enfourner des pizzas napolitaines du tonnerre, comme faire des roujiamo et des nouilles biang biang du Shaanxi. Ça ne relève que de l'anecdote, mais ça me donne l'impression que l'on passe sous silence à quel point le secteur dépend de ces personnes, à quel point elles sont peu valorisées, et ça me fait me demander pourquoi ?

Est-ce que vous constatez la même chose ou bien suis-je le fou du bus ? Je serais très curieux d'en apprendre plus là-dessus et j'aimerais bien trouver des sources un peu plus sérieuses que mes souvenirs. J'espère que mon étonnement et mes interrogations ne sont pas de la fascination mal placée et ou du racisme : je souhaite sincèrement savoir ces cuisiniers bien accueillis, formés, payés, intégrés et célébrés comme il se doit, mais j'imagine que ce n'est pas forcément le cas.
