I previously hacked together an Ikea sensor which worked well for the price, but was not weatherproof, and my solution caused the temperatures to be very inaccurate.

I'm looking for something that can be used offline (connects to HA via WiFi, Zigbee, etc but does not need WAN access) and is plug and play. I see some solutions like this, but am not sure if they will work in an 'offline' mode. Anyone have any suggestions? Something with wind speed, etc would be awesome.

Not certain it fits your requirements but I have an Ambient Weather 2904A weather station that doesn't require WAN (unless you wish for the features available on the Ambient Weather site) and there is an Ambient Weather Station plugin for HA that provides all measurements of the station as entities directly in HA.

Oh, and the connection twixt Station Base and HA is WIFI.

Had this for several (many) years, 2904A likely not still available but certainly you can find a comparable current model. In fact, model 2902 appears to be an exact duplicate of what I have...
