Usually it's because they work in shit conditions for shit pay having to deal with all kinds of shit for 8 to 12 shitty hours a day.

The ideal would be no wage theft AND fixed orders.

Unless you are In and Out. Man that place does a good job with their employees. And it shows with the service you get.
