I love adding zucchini and yellow squash to pasta dishes. Makes them so much better.
Zucchini, squash, and some goat cheese mixed with pasta water to make it more sauce-like makes an awesome dish
My favorite has to be cheese tortellini, zucchini, yellow squash, sun dried tomato pesto, with some butter. So amazing. I always make sure to cut stripes down the sides of both squashes so they aren't too rubbery though.
Growing zucchini and summer squash for the first time, and after cooking some up with pasta, I feel like I’ve been living under a rock.
Why is it so good??
