I don't think I can realistically use the LCD directly, but the other circuit board has only 7 pins as input, so 5 data pins at most. This seems like it could be done, though I doubt any documentation exists for the board.

What can a total newb like me do with this?

ArchiveBox has a large collection of all types of web archiving tools and other resources on its github wiki. I very randomly stumbled on this, so I thought I would share, in case it helps anyone. I have a large-ish personal web archiving project going on, and this will be a great resource for sure.
