Not OP but I make a pretty similar dish. Brown your sausage (veggie or otherwise), saute some onions and garlic, throw in a can of fire roasted tomatoes and the beans, some broth and spices, cook it down to your desired consistency.
I do it with chicken, vegan chorizo, cannelini beans and a good bit of smoked paprika for 15 minutes in the electric pressure cooker. Tasty and quick meal prep
Haha yep that's pretty much the same! Only I reduce the sauce before the beans.

No problem! I use a cup of broth per can of beans and you can switch up the bean types, proteins and spices to make some variety. You don't even really need to brown the meats (or "meats") first, it's just a little tastier that way. If you skip it, you can be eating in like 30 min if that's your desire.
