Other 196's:
Just 2 turkey legs seasoned with a Memphis style BBQ rub. Smoked them for about 4 hours at about 275⁰F using apple wood chunks and charcoal in my side-smoker.
Were they tough at all like the ones you get from amusement parks or ren fairs?
Not tough at all, I pulled them right at 165⁰F, so they're still nice and moist
No brine?
No, I thought about it, but got sidetracked yesterday and missed my window, so I just quick seasoned them before smoking
Is it yummy? I haven’t tried turkey cooked like that
