I’m pretty sure I had that exact thing in a noodle shop in DC
I expected a brown broth because you said shoyu. What gives it the red color?
I thought the same actually! I assume that the red is because it was the spicy version…Apparently the the broth color is more based on how the stock base is prepared, the shoyu is added after.
