Made some 48hr pizza but only had time to let it rise overnight. Still one of the best pizzas I ever had. The dough is just amazing. Even had a friend try making it today and he said it was so good he basically vacuumed it up.

I know it doesn't look like much, but I promise you it was amazing.

I tried my hand at corned beef and cabbage and it came out perfect! I slow-cooked the brisket in Guinness draught with garlic, onions, potatoes, carrots, and cabbage. I also served it with a balsamic vinegar reduction and stone ground mustard. I'll definitely make this again!

For the pancakes: • 100 g (3 ½ ounces) fresh spinach • 200 ml (¾ cup) oat milk or water • 100 g (¾ cup) chickpea flour • 50 g (½ cup) oats, finely ground • ½ tsp baking powder • 1 tsp lemon juice • ½ tsp salt • ½ tsp cumin • 1 tbsp olive oil for the pan

Pan seared lamb loin chops with pilaf, roast acorn squash and broccoli.

I am working on getting my family back into nice Sunday dinners. It is a habit we fell out of when the pandemic hit. I would really like to get back into having nice dinners with guests again.
