It's the biggest bummer when I go to a place hungry for some chips and they're the kind of chips with the skin on. I'm not not a fan of them at all, the texture is gross and it also looks ugly

I'm agnostic about it, but it is a divisive issue from what I've run into.

The complaint about texture is something I've seen people talk about as the main factor, with appearance being unusual. This isn't the first I've seen someone bring it up, but it's not at all common to see/hear.

One of my cousins says it makes them look dirty, rather than ugly. And, she says she can taste the dirt because of that. I can't say the dirt flavor is accurate, but there is a subtle difference in flavor with skin on fries/chips.

Like I said, I'm fine either way, don't have a preference.

But potato wedges I better have some skin on them, or I'll be disappointed. Whole different critter because you need that crispy skin up contrast with the fluffy interior.

I agree with them tbh, its not every time but they do tend to taste dirty with the skin on.

The skin has a lot of extra fiber. It is the only significant difference between the flesh and skin. It's the same reason why brown rice tastes and feels different than white rice.

Fiber.

That's the only difference between the skin and flesh of a potato.

according to big potato about half the fiber in a medium potato is from the skin!

Yes.

A 5.3oz potato has ~2g fiber with skin and only ~1g without it.

Which plays into texture. The skin doesn't fluff up nearly as much as the flesh, which means the chips don't feel as satisfying to bite into. That makes a big difference for some people.
