Like knowing the difference between a salad fork and a dinner fork, sending a thank you letter doesn't demonstrate that one cares about the job, it demonstrates that at some point you were coached to send thank you letters after an interview. It weeds out qualified candidates who didn't receive that coaching due to culture, class, etc.
