What kind of pickles were they? I can see the acidity of the vinegar in the pickles as well as the lemon in the hummus working well with the dish. I of course say this after I just made my family eggs benedict last night, putting a hearty squeeze of lemon into my hollandaise, like I’ve never had acid/citrus with my eggs before lolol

What style pickles were they? I can see the brightness from the vinegar in the pickles as well as the lemon in the hummus working well with everything, it’s just a combination I’ve never considered before. I say this as I just made my family eggs benedict last night after putting a good squeeze of lemon into my hollandaise sauce like I’ve never had eggs with acid before lolol

I went cheap with frozen tilapia, any white fish would work well though.

Jalapeño cilantro salsa, it turned out to be a great compliment to the pico. I used grape seed oil as my neutral oil and only a 1/4 cup. H‑E‑B paper plates ftw! It makes life without a dish washer a little more bearable 😅

 

I’ve been making this for my lunches for the past two weeks and I just can’t get enough of it. The blue corn come raw, I pan fry them fry and they are chef’s kiss.
