It's chewy and tender. I'm really happy with it. My kid won't eat it if the crust is too hard, so I don't leave it in as long as I otherwise might.

This one is for BLTs. Going to save the heel for snacking with butter and flake salt though.

I do nothing special, really the only things I'm doing differently now vs as a beginner is using a dutch oven and higher quality flour. That and being more deliberate about hydration and timing feels like 75% of the whole skill.
