Morgoth is such a bitch though. He literally got attacked by his spider bro when he tried to betray her and got so spooked he screamed so loud all of Middle Earth heard it.
To be fair, screaming that loud when seeing a spider is not an uncommon reaction.
I guess a skyscraper sized spider would be enough to warrant at least a yelp from the supposed all powerful world ending being.
He defied Eru only in the sense that he went against the grain of the music, but since Eru is omniscient of the whole musical piece, even defiance of direct wishes from Eru is still part of the overall plan. And sometimes a musical score needs a bit of dissonance here and there.
Even the idea that Eru stepped in at the last moment to help the Ring off the cliff works, because that's akin to silently tuning an instrument before the next movement. Gandalf being sent back upgraded the same.
I read the LOTR and The Silmarillion to my son when he was young, his opinion of the bad guys was crystal clear:
"Sauron was like nothing compared to Morgoth! He didn't do ANYTHING in the book that was named after him, except maybe stalk people with his Palántir! Morgoth was WAY better and he was actually doing stuff all the time."

The giant spiders weren’t Morgoths minions though. If you’d call Ungoliant serving Morgoth, Shelob would count as serving Sauron just as well.
I'd say Morgoth and The Ungoliant had a much closer working relationship than Sauron and Shelob. Partners in crime might be more apt
I mean, Sauron gives Shelobs snacks and treats it, per Tolkien's words, like he's throwing dainties to a cat, so it's having a partner in dark deeds vs having a pet.
Yeah but neither is a minion there. Morgoth thought Ungoliant to be his minion while acting as if she’d be his partner, which blew up in his face
