Most people I have seen cook eggs have the heat set way too high. Im pretty sure it's due to impatience.

possibly. but also maybe people just grew up thinking you're supposed to need a steak knife to cut your eggs. kind of like how most people think folgers instant is exactly the same as the $20/lb coffee

Yeah but the threat of flu is real here too. I've cooked this sunny sides up like after centuries only because this eggs are from local agriculture science lab. The scientist is my neighbor. He gave me to try out those.

FWIW, Costco bulk eggs run < $4 a dozen. This is in $$$ NorCal.

But if you want the good stuff, Trader Joe's sells these 'dark yolks' eggs. Worth every penny.
