My twenty pounds of corned beef brisket is about ready to come out of the brine. Gonna make some corned beef and cabbage with some of it, some corned beef slaw with other parts, slice about a pound for sandwiches and freeze the rest.

It does look pretty messy when I make it, so that's definitely true! Making it look professional is a high art, especially at speed.

It's also a great way to trick myself into eating more vegetables (don't tell the sushi purists).
