My god that looks amazing. Bet those tortillas are warm, too.
I'm very proud of my double burner glass top griddle. That thing can get hot enough to wipe your finger prints from existence.

Nice, I made some birria tacos recently with chuck. Turned out really good, but cheek meat is my favorite.
Have you had birria made with proper goat meat? It's heavenly.
I haven't and I'm not sure where I would get it. Probably a specialty butcher or maybe Fiesta.
Always wanted to try. What cut of meat did you use? A whole leg or something?
I've never made it myself, unfortunately couldn't tell you.
For birria, I do bone in Chuck and short ribs for that delicious boney fatty goodness. Makes for great consomme.
I'm living in Japan and the one thing I miss more than anything is Mexican food...
Where's the meat? Really, whenever I have mexican food the tortilla can barely hold it.
Those look delicious, but hold the cilantro for me (yeah, I'm one of those weirdos).
